Valli del Bitto Spa

The Valli del Bitto Spa company is an expression of concrete solidarity in support of Storico Ribelle, a historic cheese of the Orobie region, in order to preserve a cultural heritage of the area made up of traditions inherited from past generations, technical skills, knowledge and practices related to nature. The company currently unites about ten producers who continue to produce this cheese according to the historical method: each of the members is committed to maintaining a series of traditional practices in the mountain pasture and gives its summer production to the Gerola Alta Centre.

The sales point and tasting area is located on the ground floor of the Bitto Centre in Gerola Alta. Here you can buy the Storico cheese by the slice, the Winter Dairy cheese, the fresh Maschèrpa in the summer months and the seasoned Maschèrpa in the winter months, the Principi delle Orobie cheeses and the unpasteurised butter, available only in the winter period. In the tasting room, it is possible to taste the ‘’vertical of Storico‘’ while sipping a glass of the best Valtellina cellars; by reservation, it is also possible to taste Storico Ribelle in traditional local preparations.

On the lower floor of the building it is possible to take a guided tour of the cellar, which houses more than three thousand wheels of Storico from different vintages. This is where the maturing of the cheese takes place, which must be constantly worked to reach the appropriate maturity.
